For Tawa Chicken Roast:
12-15 Dry Chilies
12-15 Garlic pods
1 inch Ginger
1 Star anise
1.5 inch Cinnamon
1/2 tsp Cumin
3-4 Cloves
1 tsp Stone flower

1/4 tsp Turmeric
3 tbsp Oil for Marination
1 Lemon Juice
750 gms Tandoori cut Chicken
1/4 cup for Roastings
For Mustard Fish:
3 tbsp Soaked Mustard
2 Green Chilies
1/2 inch Ginger
5-6 Garlic Pods (grind to a fine paste)
500 gms Boneless Fish
Salt
1/4 tsp Turmeric
1/2 tbsp Chili Powder
1/2 tsp Black Pepper
2 tbsp Corn flour
1 tbsp Maida
Oil for Deep Frying
For Carrot Anjeer Semiya Payasam:
1/2 litre Milk
3/4 cup Semiya
1/2 cup Carrot gratings
5-6 Anjeer choppings
3 tbsp Ghee
1/2 litre Water
3/4 cup-1 cup Condensed Milk
1/2 tsp Vanilla essence
3 tbsp Cashews
2 tbsp Raisins
For Gongura Chicken:
1/3 cup Oil
7-8 Garlic pods
1/2 tsp Cumin
2 Dry Chilies
2 sprigs Curry leaves
1/2 cup Onion choppings
2 slit green chilies
1 tbsp Ginger garlic paste
1/2 Kilo Chicken
1 Tomato slices
2 tbsp Chili Powder
1/2 tsp Turmeric
1 tsp Coriander powder
1 tsp Roasted Cumin powder
1/2 tsp Garam Masala
Salt
200 gms Gongura
1.1/4 cup Water
For Mutton Dum Biryani:
1/2 kilo MUtton
50 gms Mutton Fat
1/4 cup Oil
1/4 cup Ghee
7-8 Green Cardamoms
8-10 Cloves
3 inch Cinnamon
1 Star anise
2 tbsp Stone flower
3-4 Bay leaves
1 cup malai curd
1.5 tbsp Shahi Jeera
2 Onion slices
3 Green Chilies pieces
2 tbsp Ginger garlic paste
2 Tomato cubes
1 litre Water
Fist full Mint & Coriander
1/2 kilo Rice
1/4 cup Milk
2 Lemon Juice
2.5 tbsp Chili powder
1/2 tbsp Coriander powder
1/2 tbsp Roasted Cumin Powder
1/2 tbsp Garam masala
1/2 tsp Turmeric
Salt
1/4 cup Ghee
For Brinjal Curry:
3 tbsp Peanuts
2 tsp kaju
1.5 tbsp Sesame
1/4 to 1/3 cup Oil
6-7 Slit Brinjals
1/2 tsp Mustard
2 pinches Fenugreek
1/2 tsp Black pepper
8-10 Garlic pods
2 sprigs Curry leaves
1 cup Onion choppings
2 Tomato choppings
1 tbsp Coriander powder
1.1/4 tbsp Chili powder
1/4 tsp Turmeric
Salt
1/4 cup Tamarind extract (extracted from lemon size tamarind)
2 cups Water Coriander choppings
